Another option for hardboiled eggs.
I despise making these for some reason. They should be really easy, but are a pain.
I’ve been reading about them a lot and since I have a
little human who refuses to eat meat (we won’t go there today),
I have been looking at other options.
I know they are packed with protein and he needs that,
or actually we all do. I had read about eating this
for breakfast, and then I had a flash back.
I am a regular stalker of LC….Lauren Conrad to be exact.
And don’t lie to yourself, I know we all are. Even as far as watching old Laguna Beach & The Hills episodes?

Anywho, she had posted forever ago about cooking eggs
in the oven. I’m not going to reinvent the wheel here, but it seemed pretty simple.
and it worked.
- Place your eggs in a muffin tray to prevent them from rolling or cracking.
- Bake them at 350 degrees F for 30 minutes. (I cooked mine at 350 for 30 minutes and they were perfect. However, depending on your oven, you may need to adjust the temperature down to 325.)
- Remove from muffin pan using tongs or a spoon and place eggs into a large bowl of ice water with a pinch of salt. Let them soak for about 10 minutes or until they are cool. This makes the shell easier to peel and stops the egg from overcooking.
This method is mess free and incredibly simple. If you ask me, it’s pretty much foolproof. One thing to note: When they bake in the oven, they will often develop small brown spots. I think it’s from sitting in the pan and the heat.
They aren’t the prettiest by any means, but they were simple and worked out fabulous for planning ahead.
