Yes, I am a thief, I stole it from the side of the box of rice. This is exactly as it is titled, quick and easy. In fact, the only thing that was slightly time consuming was cutting the chicken, which I used meat scissors. Yes, I too can be awesome. This was seriously up and going in less than 5 minutes, pshhh…awesomeness is oozing over in this one.
1 lb. boneless skinless chicken breasts, cut into thin strips or bite size pieces
1 tsp. garlic, minced
1 Tbsp. oil
1 1/4 cups water
1/4 cup lite soy sauce
1 Tbsp. sugar
1 pkg. (16 oz.) frozen stir-fry veggies
2 cups Minute White Rice, uncooked
1. Cook and stir chicken and garlic in hot oil in a large skillet (I use an electric skillet, easier for the rice than on the stove top) on medium-high heat 5 minutes or until chicken is cooked through.
2. Add water, soy sauce, sugar and veggies; stir.
3. Stir in rice, cover. Remove from heat. Let stand for 5 minutes. Fluff with fork.
(I used freeze dried garlic, it rocks and saves time)
