As I lay last week in the dentist chair, wincing from not only the sound of the driller thingy, but from the all-too-chipper hygienist who was going into great detail of her glory days playing high school basketball, I wondered why anyone actually goes to the dentist anyways.
It has only got to be for the goodie bags.
So I start to willingly zone…Eyes proceed to close now and take you off to a faw, faw away land….pronto.
In the distance, above the masked chatter and he whirling, I hear Ms. Hoda Hoda talking about to tomatoes, all different kinds and what to make with them. I really want to open my eyes, but then the chatter might increase and so will the drilly thing, bleh. Not that I don’t dig a bubbly hygienist, but I’m not a morning person and it’s hard to be super involved with a hand, drill, cleaner, water and vacuum in ones mouth.
Hoda goes on talking with Adam Rapoport about tomatoes and cheese, I then managed to squint one eye open because of what I have been looking for. Several years back, on a trip to Florida, we had sliced tomatoes with a grilled piece of cheese for an appetizer and it was deeeelish.
This wasn’t the exact same as what I was looking for, but it sure was close and looked oh so good.
Heirloom Tomato and Feta Sandwich
Ingredients:
Pullman Toast
Two Large Tomatoes
Salt
Freshly Ground Pepper
Block of Feta
Block of Mozzarella
Fresh Oregano
Olive Oil
1. Lightly toast thick slices of white bread, a Pullman loaf is ideal (I couldn’t find this so I just found a large, white loaf)
2. Drizzle with Olive Oil
3. Add tomato slices, salt, freshly ground pepper, slabs of feta (I crumbled it), fresh oregano and more oil.
I made the feta for the hubs and myself, then used the mozzarella for the offspring, they didn’t like the ‘stinky’ cheese.
