So bear with me…
My good friend gave me an easy peasy recipe for chicken this past week.
It’s so simple and makes a ton,
so you can munch on it for several days.
Annnnd, it’s made in the
crockity crock pot which I luuuuuv.
The first night we made burritos, which were fabulous
and only used one breast of chicken between the 5 of us (I made four breast)
So the last night before I tossed the rest of the meat (which we used for a week)
I decided to try stuffed potatoes.
Ingredients:
Medium to Large Baked Potatoes (I used 5)
Shredded Chicken* (recipe below)
Sour Cream
Cheese
Butttttta
Avocados
Salsa (if desired, the husband did but not this chick)
Directions:
Seriously…do you need directions for this?
Bake the taters. I did 425 for a tad bit over an hour
Then add buttttta, chicken, cheese, sour cream, avocados and salsa, if your little heart desires.
Proceed to mush together.
And stuff.yo.face.
Holy moly… this was good
And we were painfully full
*Crock Pot Chicken:
3-5 Chicken Breast
Jar of Salsa (click HERE for what I used and it is our FAV!)
Put chicken in crock pot and pour entire jar of salsa on top.
Cover and cook on low for 7 or so hours.
Chicken should be super tender and just about fall apart when a fork goes through it.
I had to scoop it out, because it kept coming apart.
Then I shredded all very quickly with a fork,
put in a bowl and munched on it with corn tortillas throughout the week.
