this is beyond easy….don’t hate.
it has become my go-to way to fix veggies,
besides the bags you can nuke.
pure genius.
grab a handful, or 8, of fresh veggies.
seriously, any will do.
And wash those suckers. (my local market also sells bags of fresh,
that make it super easy).
Squash, carrots, brussel sprouts…whatevs.
For the larger ones, cut down to bite size or so,
you want them to cook all the way through.
Spread them out on a cookie sheet, with tiny little walls on the sheet.
Drizzle EVO in a fun squiggle pattern across the top,
then sprinkle sea salt on top of that.
Pop them in your oven, set at 415, for about 15 or so minutes.
with smaller veggies, like green beans and asparagus, I might stir them
around once or twice,
but we like them crispy.
Or some would say burned.
