The sound of baked avocado, bleh…
We are big avocado eaters around here, but baked? Nope, sound too mushy.
Husband texted me this, said we should try it, being the health nut and all that he is, I knew it would be a healthy option since it has two healthy fats, egg and avocado.
And in my usual form, I topped it with cheese.
whoop there it is.
Eggs (2 per avocado)
Salt & Pepper
Heat oven to 425
Cut avocados in half
Toss pit and scoop out a bit of the center so the egg will fit
Crack egg and place inside (I had to remove some of the white so it would fit), making sure to keep the yolk intact.
Sprinkle with salt, pepper and cayenne.
Bake for 12-15 minutes, till egg is cooked to your liking.
Sprinkle with cheese (if desired) in the last few minutes.
