Lord knows that I have some of the pickiest eaters.
ever.
But the one thing that they will always ask for is breakfast or mexican food.
And we are ALWAYS running non-stop.
Try to stick on a healthy track with those two food request and not be time consuming….good luck.
So on my last daily trip to my local United Grocery Store, my go-to for my favorite Farmland items that normally revolve around anything having to do with bacon,
I instead grabbed Farmland Fully Cooked Sausage,

cause we all know I am all about the easy way out.
I had fabulous intentions of using it for breakfast, just to change things up a bit.
That is until it’s college game day (our favorite day around here), you look up and realize how many kids there are in your house
and they are ALL hungry. Including the husband.
And you would rather them eat something besides popsicles.
again.
I decided to use the ‘tiny bowl’ chips, that every time we eat them I talk about the fabulous idea of stuffing them with goodies….I know I’m not the only one who does this.
I rummaged the pantry, had the aha moment, knew it would not take long and was so glad I had opted for the fully cooked sausage.
Ingredients:
Farmland Fully Cooked Sausage (I used four patties)
Bag of multi-grain scoop chips
Shredded Cheese
Coconut Flakes
Guacamole
Tomato
Low-Fat Sour Cream
Directions:
Pre-heat oven to 350 (if you want your cheese melted)
While oven heats, heat up the sausage patties and set out scoops on cookie sheet. (1.)
Crumble sausage and place inside of scoop. (2.)
Sprinkle with shredded cheese and coconut. Yes, I said coconut. I have become slightly addicted to adding this to most foods, especially mexican foods.
Try it….you will thank me. Your welcome. (3.)
While cheese melts, chop tomato.
Pull out when cheese has melted and top with guac, tomato and sour cream.
All in under 30 minutes.
Seriously…I am not lying. Super easy, super fast and super yummy.
Enough to feed the gang of blonde headed, little girls on our street and the husband.
And gone before I could finish making all of them.
That’s a good thing.
